Easy Keto Peanut Butter Brownies

Ingredients

  • 180mls olive oil
  • 2 scoops Chocolate protein powder
  • 3 eggs
  • 1/2 tsp vanilla extract
  • 1/4 cup almond flour
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/4 cup sugar-free chocolate chips

Directions

  1. Preheat the oven to 160°C. Grease a 20cm square baking tin with cooking spray or line it with parchment paper for easy removal.
  2. In a large bowl, whisk together the olive oil, chocolate protein powder, eggs, and vanilla extract until well combined.
  3. Add the almond flour, baking powder, and salt to the bowl. Whisk again until the dry ingredients are fully incorporated into the batter.
  4. Fold in the sugar-free chocolate chips, ensuring they are evenly distributed throughout the batter.
  5. Pour the batter into the prepared baking tin and spread it out evenly using a spatula.
  6. Place the baking tin in the preheated oven and bake for approximately 20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake as the brownies can dry out.
  7. Once baked, remove the brownies from the oven and let them cool in the pan on a wire rack before adding the peanut butter topping.

Peanut Butter Topping

  • 3 tbsp butter
  • 1/2 cup good quality peanut butter
  • 1/2 tsp vanilla extract
  • 1/4 cup monk fruit sweetener
  • 1/4 cup sugar-free chocolate chips
  1. In a microwave-safe bowl or on a stovetop, melt the butter and peanut butter together until smooth and well combined.
  2. Add the vanilla extract and gradually whisk in the monk fruit sweetener a little at a time until the mixture is creamy and well incorporated.
  3. Once the brownies have cooled, pour the peanut butter topping over the top, spreading it evenly with a spatula.
  4. Sprinkle the sugar-free chocolate chips over the peanut butter layer, pressing them gently into the topping.
  5. Place the brownies in the refrigerator for at least an hour to allow the topping to set.
