Keto Cheesecake Recipe for Dessert Lovers

Keto Cheesecake Ingredients:

To make this mouthwatering keto cheesecake, you’ll need:

  • 2 cups almond flour
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons monkfruit sweetener
  • 2 teaspoons vanilla extract
  • 680g cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tablespoon fresh lemon juice
  • A pinch of salt
  • Fresh berries (optional) for garnish

 

Keto Cheesecake Instructions:

  1. Preheat your oven to 160°C. Grease a 22cm springform pan and set it aside.
  2. In a medium bowl, combine the almond flour, melted butter, and 1 tablespoon of sweetener. Mix until well combined and press the mixture evenly into the bottom of the prepared pan to form the crust.
  3. Bake the crust in the preheated oven for 10-12 minutes, or until it turns golden brown. Remove from the oven and set it aside to cool while you prepare the filling.
  4. In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the sour cream, remaining sweetener, and vanilla extract. Beat again until well combined.
  5. Add the eggs, one at a time, beating well after each addition. Incorporate the fresh lemon juice and a pinch of salt. Continue beating until the filling is smooth and fluffy.
  6. Pour the filling over the cooled crust in the springform pan, smoothing the top with a spatula.
  7. Place the cheesecake in the oven and bake for 45-50 minutes, or until the edges are set but the center is still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour to cool gradually. This helps prevent cracking.
  9. Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight if possible, to allow it to fully set.
  10. Before serving, garnish with fresh berries if desired. Slice and serve chilled.
