Keto Chicken Schnitty
Who says you can’t have your favourite chicken schnitzel and still stay keto? This easy keto chicken schnitty recipe is sure to satisfy your cravings without the guilt of indulging in too many carbs. What Could Possibly Taste Better Than Bread Crumbs?!
Pork rinds! Well, a mix of almond or nut meal mixed with pork rinds and a few other herbs and spices. Almost giving more of a Southern Fried chicken taste to a usual plain bread crumbed chicken, this herby mix goes perfect with coleslaw on a keto bun!
What Makes It Keto?
Replacing the carb-filled regular bread crumbs with the high-fat ground pork rinds and almond/nut meal keeps you on track with your keto diet while creating a meal the whole family can enjoy! Choosing a high fat healthy oil to fry your chicken in is also essential to keeping this recipe keto. I prefer ghee or lard, but olive or avocado oil also work really well to not present that overpowering, oil flavour.
Keto Chicken Schnitty
Serves 4
Ingredients:
- 500g chicken (I prefer thighs, but breast is ok too)
- 1/2 cup almond flour
- 1 egg
- 1/2 to 1 cup of “crumbs”. Mix of almond/nut meal and ground pork rinds. I like 1/2 and 1/2 but just use what you have. Add in garlic powder, onion powder, paprika, a bit of parmesan cheese, salt, pepper, herbs.. whatever you like.
- Lard, Olive oil, ghee or avocado oil for frying
Method:
- You can slice the chicken to make schnitzels or cut the chicken into strips.. or even smaller pieces for nuggets. If making schnitzels, bash the meat to make it thinner and an even thickness.
- Put the flour in a bowl
- Crack the egg into a separate bowl and whisk with a fork.
- Heat the oil in a frypan, not too high or the crumbs will burn before the chicken is cooked.
- Dip the pieces into the flour, then the egg, then the crumbs.
- Fry in the oil until crispy golden brown and cooked through.
- Remove from oil and drain on a paper towel.
What Should I Serve It With?
Anything that you’d normally serve chicken schnitzel with! If you’d like to cut it into smaller pieces and make keto nuggets for kids these are excellent. The usual chicken salads, chicken parmi, or even a southern fried chicken burger with coleslaw on a keto bun makes for an amazing dinner the whole family will love!
