Do you have trouble keeping your keto lunch salad fresh?

I love, love, love jar salads. You can prepare a whole bunch of keto salads once a week and they will stay fresh in the fridge.. it’s all about how you layer the ingredients. Here’s one of my favourites, a delicious spiced carrot salad. You can add any protein you like but I think lamb goes well with this one.

Ingredients:
  • Protein of your choice
  • 2 large carrots, grated
  • 1/2 cup coriander leaves, chopped
  • 1/2 cup mint leaves, chopped
  • 1 tbsp dried cranberries/currants
  • 1/2 chilli, chopped (optional)
  • 1/4 tsp sumac
  • 1/3 cup almonds, chopped

Dressing

  • 2 tbsp good oil
  • 1/2 tbsp lemon juice
  • 1/2 tbsp apple cider vinegar
  • 1/2 tsp grated ginger
Order:
  1. Make dressing in a small jar. Shake well, then pour into the big jar.
  2. Place carrot in jar, then the chilli if using and the sumac.
  3. Then place your protein in
  4. Next, put the cranberries in
  5. Then add the mint and coriander.
  6. Toast the chopped almonds in a fry pan to toast them. When cool, put them in a separate container.
  7. Put the lid on and store in the fridge
  8. TO SERVE: Pour salad into a bowl. Sprinkle almonds on top and mix the salad up well.
