Today, I bring you a delicious Keto salmon salad recipe that combines the richness of salmon with the creamy goodness of avocado in a vibrant salad. Let’s dive into our Salmon and Avocado Salad creation!

Ingredients:

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens (e.g., spinach, rocket, and watercress)
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • Lemon wedges for garnish

For the Lemon Dijon Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions for keto salmon recipe:

1. Preheat the Oven:

Preheat your oven to 200°C.

2. Prepare the Salmon:

Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle the fillets with olive oil and season with salt and pepper. Bake in the preheated oven for about 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

3. Make the Dressing:

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Set aside.

4. Assemble the Salad:

In a large salad bowl, combine the mixed greens, sliced avocado, cherry tomatoes, and red onion.

5. Flake the Salmon:

Once the salmon is done, use a fork to flake it into bite-sized pieces.

6. Add Salmon to the Salad:

Gently add the flaked salmon to the salad.

7. Drizzle with Dressing:

Pour the lemon Dijon dressing over the salad and toss gently to combine, ensuring the salad is evenly coated.

8. Optional Toppings:

If desired, sprinkle crumbled feta cheese over the top for an extra burst of flavour.

9. Serve:

Divide the salad among plates and garnish with lemon wedges.
