Pork Keto Stuffed Mushrooms Recipe
Ingredients:
- 12 large field mushrooms
- 2 tbsp good fat or oil
Stuffing:
- 500g pork mince
- 3 cloves garlic, crushed
- 1 tsp dried chilli flakes
- 1 1/2 tsp fennel seeds, coarsely ground
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp good fat
- 1 tbsp herbs (your choice), chopped
Instructions:
- Preheat oven to 190 C
- Remove mushroom stems. Finely chop the stems and put them in a large bowl.
- Add the rest of the ingredients to make the stuffing and mix well
- Grease a shallow baking dish and arrange mushrooms gill-side up. Divide the stuffing between the mushrooms and drizzle with oil or fat. Season with S & P
- Cover with foil and bake for 15 mins. Remove foil and bake for a further 10 mins
- Sprinkle with extra herbs.
