Recipe: Keto Cake for Sweet Cravings

If your sweet tooth is calling for a cakey treat, look no further! This quick and easy Lemon and Almond Santiago Keto Cake recipe is here to satisfy your cravings. Not only is it a delightful dessert, but it’s also a smart option for portion control. I recommend slicing it into 12 portions and stashing them in the freezer for a convenient treat. Each slice accounts for 1 fat portion, so you can indulge guilt-free by adjusting your dinner allowance a bit.

For all the Thermomix enthusiasts out there, you’ll find this recipe on Cookido with a simple substitution for the sugar.

Ingredients:

  • 250g monkfruit caster or icing sugar
  • Zest of 1 lemon
  • 250g almond meal/flour
  • 4 eggs
  • Optional: 1/2 tsp cinnamon

Instructions:

  1. Preheat your oven to 180°C (356°F). Line or lightly spray a round cake tin to prevent sticking.
  2. In a large bowl, combine the monkfruit sweetener (or icing sugar) and eggs. Mix these ingredients together until you achieve a smooth and well-incorporated mixture.
  3. Gradually add in the almond meal/flour and lemon zest to the egg-sweetener mixture. If you’re a fan of warm, cozy flavors, you can also toss in the optional 1/2 teaspoon of cinnamon at this point.
  4. Mix all the ingredients thoroughly until you have a consistent batter.
  5. Carefully pour the cake batter into the prepared cake tin, spreading it out evenly.
  6. Bake the cake in the preheated oven for approximately 25 minutes. Keep an eye on it—the cake should be golden brown and a toothpick inserted into the center should come out clean when it’s ready.
  7. Once baked, take the cake out of the oven and allow it to cool in the tin for a bit.
  8. If you have icing sugar on hand, sprinkle a light dusting over the cooled cake for an elegant finishing touch.
  9. Now, it’s time to slice and savor! Remember, each slice is equivalent to 1 fat portion, so you can enjoy it without derailing your dinner plans.

This Lemon Almond Cake is not only a quick fix for your sweet cravings, but it also offers a delightful blend of flavors that’s perfect for any occasion. Whether you’re a seasoned baker or just starting out, this recipe is a breeze to whip up. So, indulge responsibly and let your taste buds dance with joy! ✨
