Citrus Fish Tacos
Taco night is a usual favourite in every household, but why not mix it up with citrus fish taco’s instead! A delicious source of protein and omega 3’s, this dinner will be a tasty and nutritious meal the whole family can enjoy. The citrus in these fish taco’s also makes this a really nice summer lunch and easy to make a few batches for lots of people!
Who Invented The Fish Taco’s?
People have been eating fish tacos in the coastal areas of Mexico for as long as the boats have been bringing in fish and there’s been tortilla’s ready, which is actually hundreds of years! Where the fish taco originally began is actually an ongoing debate by the two cities of Mexico, either Ensenada or San Felipe with both claming to be the “home” of the fish taco. It was then brought over to California by a Ralph Rubio, a tourist so smitten after his first taste, that in 1983 he opened a restaurant in Mission Beach, California that specialized in fish tacos. From there it was shared around the world!
Ingredients (for the marinade):
- the juice squeezed from 2 large oranges
- the juice squeezed from 1/2 lime
- 3 tbsp. Olive Oil
- 1 tsp cumin powder
- 1/2 tsp. Salt
- 4 Cod Fillets (cut into 1 inch chunks)
TIP: If you don’t like cod, try substituting with prawns.. yum!
Ingredients (for the wraps):
- 6-8 Cabbage or lettuce leaves
- 1/2 red capsicum (diced)
- 1/2 red onion (diced)
- 1 mango (diced)
- ½ avocado (sliced)
Directions:
Mix the orange juice, lime juice, olive oil, cumin, and salt in a bowl and combine well.
Gently place the pieces of Cod into a large Ziploc bag and pour in the juice. Marinade for 2-4 hours in the refrigerator, flipping the bag over about half way through.
Next, heat some olive or coconut oil over a large skillet. When the pan is warm, add the Cod and cook for about 4-5 minutes on 1 side, then turning only once, finish cooking on the other side (about 8-9 minutes total)
Then, simply prepare your tacos to your liking, adding the fish, capsicum, onion, & mango (be creative and add anything else you think may taste great on there!)
What Should I Serve With My Citrus Fish Tacos?
This flavourful Mexican dish is served best with your usual taco toppings, guacamole (check out my blog for The First Guacamole Recipe Ever Written!), salsa, salads. Beans, cauliflower rice or regular rice and bigger salads can also be a great side dish to this Citrus Fish Taco triple, and thanks to the citrus bringing out those lovely flavours and I even recommend a fruity salsa like this mango and coconut based Tropical Pico De Gallo!
