Eating healthy while eating tacos? Sounds good to me! This easy Taco Bowl recipe is a nutritious and delicious meal that you can chuck together anytime at home or on the go. 

This mouth watering mix of beef, sweet potatoes, beans, veggies, herbs and spices will make taco night part of your weekly routine that the family will love.

 

What is a Taco Bowl?

 

A taco bowl is a deconstructed taco without the wrap or a taco salad without the lettuce, just enjoy all the best taco fillings mixed together in a bowl! For meat, I use beef mince but you could also use chicken or turkey mince, they all taste great. The other great thing about a deconstructed taco is it stores really well in the fridge if you have left overs or want to food prep, just keep the main ingredients separate to keep the veggies from getting soggy.

 

Can this nourishing Taco Bowl be made Keto?

 

Aside from being packed full with protein and veggies, this nutritious Taco Bowl is gluten free! To reduce the carbs, just skip the black beans and reduce the amount of sweet potato and corn. You can also increase your fat intake by frying your sweet potatoes and minced beef in coconut oil or topping your Taco Bowl with full fat sour cream as an additional high fat treat. Nourishing Taco Bowl

Serves 4

 

Ingredients

  • 1 tbsp cumin, ground
  • 1 tbsp sweet smoked paprika
  • 1 tbsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1 tsp mild chili powder
  • 2 tsp sea salt
  • 1 tsp garlic powder (optional)
  • 1 tbsp olive oil
  • 500g sweet potatoes, peeled and cubed
  • 400g lean beef mince
  • 400g can of black beans, drained and rinsed
  • 1 cup corn
  • 1 carrot grated
  • 1 cup lettuce shredded
  • 2 shallots sliced
  • Coriander, for garnish

 

Method

  1. Preheat oven to 200c
  2. In a small bowl, mix together the cumin, paprika, oregano, cayenne, chili and salt.
  1. Toss sweet potato pieces with olive oil and half the seasoning mixture from the small bowl. Bake for 15 to 20 mins until tender and cooked through.
  1. Meanwhile, cook beef over medium-high heat for 8 -10 mins until cooked. Add beans and remaining seasoning. Toss to fully coat the beans and beef with seasoning. Continue to cook until beans are heated through.
  1. Serve with grated carrot, shredded lettuce and shallots or coriander.

 

Can I Make My Taco Bowl Vegan?



Absolutely! Keto Taco Bowl’s are an easy dish to make vegan, just leave off the meat and just add in more beans and your favourite veggies with some coconut oil mixed in to increase your fat intake.
