Easy Keto Sausage Rolls

Enjoy the scrumptious taste of these easy keto sausage rolls without the guilt of carbs with this simple and flavourful recipe. With just a handful of ingredients, you can recreate the bakery-favorite treat in the comfort of your home.

Ingredients:

  • 2 eggs
  • 110g grated mozzarella cheese
  • 170g almond meal
  • 3 tbsp softened butter
  • 6 gluten free pork sausages

 

Method:

1. Preparing the Dough:

  • Preheat the oven to 220°C and line a baking tray with baking paper.
  • Separate the white and yolk of one egg, keeping the yolk aside for later use.
  • In a stand mixer bowl, combine the egg white, one whole egg, mozzarella cheese, almond meal, and soft butter.
  • Mix on low for 20 seconds or until a rough dough forms.

2. Chilling the Dough:

  • Roll the dough into a ball using your hands.
  • Wrap the dough ball in baking paper and chill in the fridge for 1 hour.

3. Rolling out the Pastry:

  • Once chilled, cut the dough in two.
  • Roll each portion between two sheets of baking paper to form large rectangles about 3mm thick.

4. Preparing the Sausage Filling:

  • Remove the top layer of baking paper from the pastry.
  • Cut the end off three sausages and squeeze the meat out in a single straight line along the long edge of one pastry rectangle, leaving a 1 cm gap at the pastry edge.

5. Rolling and Shaping:

  • Use the baking paper to help roll the pastry gently around the sausage meat until it resembles a long sausage ‘log’. Handle the delicate dough with care.
  • Brush egg yolk along the edges of the pastry to help the dough stick.
  • Repeat the process with the second rectangle of pastry and the remaining sausages.

6. Chilling and Cutting:

  • Place the sausage ‘logs’ on their baking paper in the fridge for 30 minutes.
  • After chilling, cut each sausage ‘log’ into 4 sausage rolls, totaling 8 rolls.
  • Gently place them on the prepared baking tray. Reshape the dough around the sausage meat using your hands if needed.

7. Baking to Perfection:

  • Bake for 20-25 minutes until the pastry achieves a golden brown hue, and the sausage meat is thoroughly cooked through.
